Sorry if this is a newb question but the benefit of a new account on a new site is that you can ask dumb questions, lol.

I see this sometimes when reading an article or guide and someone links to a PDF file they'll usually say, "PDF warning". What are they warning against? Should I not be downloading random PDF files about things that I find interesting?

a good introduction into why PDFs are insecure: they have their own javascript and actionscript api that can run code inside of a PDF. it's basically not exaggerating an executable document format.
